Inspired by a philosophy of minimal intervention and respect for old vines, Sentium offers a sophisticated interpretation of Sauvignon Blanc.

Origin and winemaking

The wine is sourced from old, organically farmed vines planted between the 1940s and 1970s. Sauvignon Blanc is complemented by Sémillon and carefully fermented and aged in a combination of concrete tanks, large-format neutral oak and stainless-steel drums. Extended sur lie aging develops texture and complexity while preserving the wine’s natural freshness.

Wine profile

Sentium opens with elegant aromas of Meyer lemon curd, citrus blossom, crushed seashells, wet river stones, fresh garden herbs and subtle flint. The palate is creamy yet vibrant, combining a silky, satiny texture with refreshing acidity. Notes of citrus and stone fruit lead to a remarkably clean, saline, mineral-driven finish.

Food pairing: Fresh shellfish, delicate seafood, grilled vegetables, sushi or rich fish dishes.
